Hot minute & an onion recipe 

It’s been a hot minute since I’ve written. I’ve missed it but, I’ve been so busy! In a totally good way! And some bad too I guess! 

School has been out for about 2 months and I still have 2 months until I go back (college is pretty awesome right!?) 

So, the real reason you probably came was for this delicious onion recipe I keep talking about! It’s so easy and so good! 

We went camping with some of Nick’s friends from high school a few weeks ago. This wasn’t only a camping trip but included a 13 mile kayak adventure as well! It took us about 6 hours. I tipped over within the first 5 minutes of being on the water! And of course I was carrying he food, phones, etc. luckily we have pretty awesome kayaks and we double bagged everything so everything was safe! 

We camped Friday night but, after our kayak ride on Saturday we cheated and went to the lake house to sleep in a real bed for the night (this decision was also made by the fact I had a headache, yes, still having headaches 😭) 

But, Nick’s buddy took this aluminum wrapped food off the fire and opened it and OH LANTA the smell! It was so amazing! So of course we got the recipe! And we’ve made them a few times. And we think everyone needs to make these because they are amazing! 

You need: 

onions (we used sweet Vidalia)

 BEEF bullion cubes (we tried chicken, it didn’t taste as great, so we are sticking with beef)


Cheese slices (we used mozzarella)

Aluminum foil 

So peel the first layer off the onion and cut a little off the top and buttom. So they are flat. Then cut a hole in the top of the onion and scoop out the middle of it  (you can do this as little or as big as you want, there is no particular size) 

Then, put the bullion cube right inside the hole. 

Then fill it up with butter! 

Put a slice of cheese on top! 

And then wrap it up in aluminum foil! 

We preheated the oven to 350 and cooked it for about 45 minutes! 

Then unwrap and enjoy! 

Tonight we paired it with grilled asparagus and salmon with barbecue sauce! 

Like I said, super easy and so good! 

The past few years I’ve been on a total cooked onion kick! And these are definitely at the top of the list!
